I had a caller ask for a booking, when I requested his name( as you do) he said "I don't want to give my name" so I just said well im not giving you a booking then if you cant say  give me something as simple as that !

They don't always realise that we don't really care who they are so when they come out with that, I just say, "Oh not your real name, silly." They usually get the jist but if they're still hesitant I go on with, "Holly's not my real name, but it's what I'd like you to call me. So what should I call you?" and when they say Dave or whatever and I'll go, "Dave it is then!" in a cheery way. Have caused a few giggles with that, no idea why.
