im having to take 2 weeks off work so thought what better to do then indulge my major passion for cooking.

would love to have some tasy tried and tested recipes from you all to try out.

Im not a picky eater and will eat or at least try everything once.

Not exactly recipes, but this is some stuff I made recently.

Saag aloo with tofu

1 big bag of spinach
some potatoes, chopped up small
a couple of onions, roughly chopped
about 200g plain tofu (not silken), in chunks
1 tin chopped tomatoes
some garlic, minced
1 cinnamon stick
2-3 dried chillies
lots of cumin seeds
garam masala
ground tumeric
salt

Boil the potatoes until they're pretty much done and drain them.
Wash the spinach and blanch if you like.
Grind or break up the cinnamon and chilli.
Open a window.
Heat up some oil in a wok and add the onion, cumin, cinnamon and chilli. Fry until the onion browns.
Add potatoes, garlic, tumeric and garam masala. Stir everything around for a few minutes.
Add the spinach, tomato, tofu and water if necessary.
Salt to taste, cover the wok if you've got a lid big enough and simmer for 10 minutes or so until it's done.
Serve on it's own or with whatever.


I just made this yesterday and it wasn't ready in time for dinner, but what I had was good.

Pink rooty casserole

Potatoes, beetroot (peeled) and carrots, thinly sliced
Medium onions, quartered and layers separated
Celery, sliced
Smoked tofu, in chunks
Tin of chopped tomatoes
Garlic, chopped
Bay leaves
Black pepper
Cayenne pepper
Garam masala
Vegetable bullion
Paprika
Garlic powder
Onion powder
Salt
Water

Mix everything up in a casserole and bake. Stir now and then so the stuff on top doesn't totally burn, or maybe just don't put it on gas mark 8 like I did, but it took an hour and a half to cook anyway. This was my first casserole.

The sauce was pretty strong, so needs rice or bread or something.

Baked salmon fillets (serves 2)

2 fresh salmon fillets (skinned/un-skinned)
Olive oil
1 garlic clove, halved
Bit of dill
Wedge of lemon
Salt and pepper to taste
2 pieces of tin foil, large enough to make cornish pasties-like parcels

Place salmon fillets in the centre of each piece of foil
Crush half a clove of garlic over each (or more, if you're a garlic freak like moi!)
Chop the dill and sprinkle over both
Squeeze a bit of lemon over both and season to taste
When happy, drizzle olive oil on top (about a tablespoon each); seal the edges of the foil like a pasty, leaving enough room for the steam to circulate and keep the fish moist.
Place in a preheated oven at gas mark 6/180 degrees for 20-25 minutes. Check the fish is cooked by flaking a bit in the centre (careful of steam burns when you open in parcel)
Serve when cooked - any oil left in the foil, pour over the salmon (it'll effectively be a warm dressing). I love this with rustic new potatoes, rocket salad, parmesan and warm crusty bread like ciabatta. Mmmmm....

Spaghetti alla Puttanesca (Whore's Spaghetti)


Ingredients
3 x 15ml tablespoons olive oil
8 anchovy fillets, drained and finely chopped
2 garlic cloves, peeled and finely sliced, crushed or grated
? teaspoon crushed chilli flakes, or 1?2 x 15ml tablespoons pickled
red jalape?o chilli peppers (drained, sliced and diced), or to taste
500g spaghetti
1 x 400g can chopped tomatoes
150g (drained weight) pitted black olives, chopped a bit
2 x 15ml tablespoons small capers, well rinsed and drained
2?3 x 15ml tablespoons chopped fresh parsley, to serve (optional)
salt and pepper, to taste


Method

   1. Put water for pasta on to boil, though you don?t need to get started on the sauce until itis pretty well boiling.
   2. Pour the oil into a wide, shallowish frying pan, casserole or wok, and put on a medium heat.
   3. Add the finely chopped anchovies and cook for about 3 minutes, pressing and pushing with a wooden spoon, until the anchovies have almost ?melted?, then add the garlic and chilli flakes (or sliced then diced jalape?os) and cook, stirring for another minute.
   4. This is probably the stage at which you will want to be salting the boiling pasta water and adding the spaghetti to cook according to packet instructions.

Thanks girls - all of these recipes sound fab.
Anika - im really getting into my healthy eating at the moment and have been cooking lots of tofu based dishes. Loving the sound of the saag one you posted. Will be trying that out tomorrow night I think.

Annabelle - the salmon dish sounds quite like one i make on a regular basis but yours has an added twist so thank you for that, will make things that little bit more interesting next time i do it.

holly - im italian and puttanessca has to be my all time favourite pasta sauce. Never heard of jalapenos and parsley being used in it but that sounds really nice so will follow your recipe next time.

Any one else got anything for me to try? How about some desserts.

Well again not a recipe, but I wanted some quick cooked fruit the other night so I fried slices of banana and tart apple in coconut oil, then sprinkled with chocolate powder and dolloped some yoghurt on the side. It was brilliant.

Not quite a recipe either but my favourite 'fuck, i'm absolutely starving and i've got a booking coming soon' meal.

Fresh pasta and whatever veggies you've got lying around (normally spinach, mushrooms, peppers and some frozen green beans and sweetcorn which i rinse in the sieve with hot water to defrost), boil for about 3/4 minutes, drain and add half a tin of condensed mushroom soup, little bit of garlic salt and some parsley, heat for about another minute and done!

Heh, I love the Soup On recipes. ;D Soup on pasta, soup on rice... I can totally fool myself that it's a proper thing! Although I think adding real veggies and seasoning DOES make it rather fancy!

I found this BEAUTIFUL recipe for a strawberry marscapone cream cake. It takes a lot of effort, but is so damn delicious.

OH MY GOODNESS, YOU ARE SO RIGHT.

Sorry, I read "Nigella Lawson" and went nuts, lol.

I have yet to make anything from her books that wasn't delicious. My personal favorite recipe is the raspberry chocolate pavlova. Make some whipped cream, slap it on top & with this airy, chocolately slice of heaven, you can test whether or not someone has a soul. If they don't think it's utterly delicious, run. Run fast.

I usually leave off the raspberries, but they are quite the tasty addition.

I tried out Anika's tofu saag and it was really delicious. I am a serious carnivore but this was light yet satisfying.

Try this recipe out peeps. It is AMAZING. I have made it for a few dinner parties now and everyone wanted 2 or 3 portions.

Veggies or vegans could modify it and obviously remove the lamb and lamb stock etc and add in some more veg such as potatos, spinach and peas.

I made a huge pot of it last week and lived on it for a few days with some tasy naan bread and cous cous.
