This is a how long is a piece of string question, wholly dependent on how the individual works, classes as busy, where they are based, what services they offer, price, who they market to/their client base etc. etc.
While I cannot speak for others, I will hazard that erratic is the probably most applicable descriptor. It's not just the pandemic that has caused this, there's Brexit and rising inflation that needs to be taken into consideration too.
If you still have a client base, great, but if you don't, it takes time to re-establish oneself, and while you might have the shiny new escort glow for a while, it quickly fades and you could find yourself without bookings and clients. However, you do have another job, so this does make it easier if you're not reliant on escorting for your main income. My advice is to look at the market carefully and see how you fit in/what will work for you to maximise your earnings.
