Thanks everyone.

As I said, my first was lovely. I hope he'll be coming back.

I have three more bookings for the next couple of days. I am still being really picky.

Is it out of order to be rejecting people? Should I simply ignore them, or say I am busy? I could be booked up all day everyday for the next week if I accepted them all but I want to take it slowly and enjoy myself.

No, you don't need to take every booking you can! Once you have as many as you want booked in, tell the others that you're busy this week but could see them next week. You could also ask them if they want to be contacted in the event of a cancellation.
