Are you saying you don't have a bank account, or any record of income?are you registered with HMRC?

In lieu of any documents you could offer 6 months rent upfront, but keeping a record of and declaring your income with HMRC is not only a legal obligation but can prove useful when you need to prove your income for reasons such as this one.

Yes  it is difficult but I don't think I'd want to let a flat to someone who didn't have proof of income or any savings. Only other way is to get a guarantor but they'll have to have enough income to cover it too.

Tell them the truth (or the partial truth): that you've only been working for two months and give them the bank statements for those two months. As far as employers letter get a client, friend, sugar daddy, family member etc... who owns a business and ask him the favour of writing you a letter.
Mornings were made for sleeping, wild sex and bacon.
