I finally registered so I could give you a bit of an answer! But just for the record, I've been reading SAAFE's info for ages and would probably have never survived escorting without it. Dread to imagine what could've happened if I hadn't found this place.
Anyway, I'm a London agency working girl and I work for two agencies at the moment. Both call themselves "High Class" and all that crap, so charge ?350+ per hour and take 30% and 35% commission respectively. I'm not sure if it's ok to just stick the links up here? Don't want to advertise - specially since one of my agencies is run by a man (useless! Lol) and the other by a woman (also a little disorganised!) so they are hardly a paradise for escorts. I still have to be pretty sharp about who I see and when... just because the agency announces you've got a booking doesn't mean it's a guy you want to see. So you can't entirely leave all the legwork up to them. Definitely don't put 100% trust in them! You are, after all, the one doing the job, not them, so don't do something you don't want to even if you think it'll annoy Mr. or Ms. Agency Person.
But if you like, I'll PM you my agencies? They do get me tons of work (usually more than I want, but I am pretty part-time about it all, and picky) ... but, like most other girls, I'm itching to go indie as soon as I get my own place. Then you can set your own rules and all that.
Both my agencies, by the way, interviewed me in person before taking me on. I advise taking that meeting seriously - as in, not like a job interview where you just want to try and get employed, but as in - this person will be representing me and finding me clients; do I trust them/like them/etc?
(Edit: Just reread your post and realised you're no newbie, unlike me, so please ignore any patronizing 'advice' I tried to put in!
